  1. Pre-heat oven to 250 degrees F.
  2. Lightly grease baking sheet.
  3. Whisk together the egg white, cold water and vanilla extract.
  4. Add almonds to the frothy mixture. Mix well.
  5. Combine white sugar, brown sugar, cinnamon, salt and vanilla extract in separate container.
  6. Mix in spices and almonds together.
  7. Layer almonds on baking sheet.
  8. Bake for 45 minutes to 1 hour, or until almonds are crisp. Move almonds around every 10 minutes to prevent burning. Once room-temperature, store in airtight container.
