Winter: it’s cold, dreary, snowy, rainy…I could go on but I’ll stop before I put myself in a depressive state. I absolutely despise being cold and can’t stand the snow – and this is coming from someone who was born and raised in Canada! Give me 80 degree weather, the beach and sun and I’m a happy gal!
Until beach weather arrives, I like to keep myself warm and cozy with heart-warming soups. Today’s recipe is an adaption from a tried and true lentil recipe from my mother-in-law, who is a master wizard in the kitchen. We kicked up this recipe a notch though and gave it a little extra spicy kick.
A few reasons why I love this recipe are three-fold:
- You can really adapt this recipe with whatever you have on hand. No meat in your freezer? No worries, this makes a great vegetarian meal too! You don’t like sausage? It’s all good, substitute it with chicken. You don’t have any pepper? Fine, don’t put it in the soup!
- Lentils are SO good for you. It’s a superfood packed full of protein, fiber and iron (among many other things), so you should feel good for eating lentils. Something I may have learned the hard way though is that I didn’t realize how much fiber was in lentils…my stomach didn’t like me too much after all the soup that I had. A tip that I learned is that you should soak the lentils in cold water overnight which will help reduce the bloating that you feel after eating this.
- All the leftovers!!! With only my husband and I eating in our household, this recipe creates a bunch of leftovers! We like to pack the rest in different containers and then freezing some of them. I love doing this when we’re in a pinch for time, we can always take stuff out of the freezer and voila, dinner is served!
